Startup costs, line by line

The example uses the equipment list the app fills in for a food truck. These are starting estimates, not quotes:

GroupExample
Truck$50,000
Cooking, refrigeration and prep (griddle, fryer, fridge, freezer, counter)$7,750
Fit-out (sink and water, ventilation)$4,500
Generator and point of sale$2,900
Smallwares, packaging stock, fire safety$2,500
Contingency at 10%$6,765
Startup costs$74,415

Permits and licences, the wrap and the first food order are left blank: they vary by city, so add your own quotes.

What the truck earns (example)

The same plan sells ten dishes, about 4,240 portions a month once it is up to speed. That is $24,280 in sales at a 28.5% food cost. After packaging, three crew ($9,383 a month) and $4,000 of fixed costs, it keeps $3,349 a month, a 13.8% net margin.

Payback and break-even

$74,415 ÷ $3,349 a month pays back in about 22 months. To break even the truck needs $19,420 in sales a month, about 131 portions a trading day. Check yours with the restaurant break-even calculator.

The plan left working capital at zero, and its 12-month cash flow shows why that is a mistake. Month 1 runs at about half capacity, and cash bottoms out at −$87,342 in month 5, about $12,900 more than the startup costs. That is what the cash buffer above is for.

Food truck startup costs FAQ

How much does it cost to start a food truck?

It depends mostly on the truck. In the example taco-truck plan the startup costs come to $74,415, of which the truck is $50,000, before permits, wrap, the first food order and working capital, which vary by city.

Do I need working capital on top of the startup costs?

Yes. A new truck sells less in its first months. In the example plan the cash balance bottoms out at −$87,342 in month 5, about $12,900 more than the startup costs. A buffer of a few months of running costs covers that ramp-up.

How much does a food truck make?

The example truck plans 4,240 portions a month at steady state: $24,280 in sales and $3,349 net profit a month after food, packaging, three crew and fixed costs. That is one plan, not an industry average.

What is a good food truck profit margin?

The example plan runs at a 13.8% net margin. The FoodTechGuru plan sheet treats 3–9% as normal for independents and above 10% as genuinely good.
